What is the minimum level of cover or minimum level of indemnity the Contractor has to provide for liability for liability for injury to or death of employees of the Contractor as a result of their employment in connection with the contract?

The Contractor has to provide cover for whichever is the greatest between: the amount required by the applicable law; and the amount stated in the Contract Data (see Clause 84.2 Insurance table).
